Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the all-purpose flour, rolled oats, and brown sugar until well combined.
- In another bowl, pat the pumpkin puree with a paper towel to remove excess moisture.
- Combine the dry and wet ingredients, mixing just until incorporated. Do not over-mix.
- Chill the dough in the refrigerator for 20 minutes.
Baking
- Scoop the cookie dough onto a baking sheet, leaving space between each cookie.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set but the center remains soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
