Ingredients
  

Dry Ingredients
  • 2 cups All-purpose flour Spoon & level to avoid dense cookies
  • 1 cup Rolled oats Use old-fashioned for best texture
  • 3/4 cup Brown sugar Deep flavor, helps with chewiness
Wet Ingredients
  • 1 cup Pumpkin puree Drain excess water to avoid cake-like texture
  • 1 cup Chocolate chips Feel free to mix types (dark, milk, etc.)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the all-purpose flour, rolled oats, and brown sugar until well combined.
  3. In another bowl, pat the pumpkin puree with a paper towel to remove excess moisture.
  4. Combine the dry and wet ingredients, mixing just until incorporated. Do not over-mix.
  5. Chill the dough in the refrigerator for 20 minutes.
Baking
  1. Scoop the cookie dough onto a baking sheet, leaving space between each cookie.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the center remains soft.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
